The Most Authentic Pizzas
The two most famous pizzas are pizza Marinara and pizza Margarita, they are the only two variations that the authentic Neapolitan tradition accepts.
Pizza Marinara is the oldest pizza recipe, it is seasoned with tomato sauce, garlic, oregano and olive oil. In Italian, “Marinara” means “seafaring”: the name of this pizza is linked to the fact that its main ingredients can be easily preserved, so that even the sailors, during their long trips, could prepare this delicious pizza on their ship. Neapolitans have always been very attached to their food tradition, that’s why it was incredibly important for them to have the possibility of eating their food even when they were far from home.
Pizza Margarita is probably the most famous pizza in the world, and also the most eaten in Italy. The main ingredients are tomato sauce, mozzarella, basil leaves and olive oil. The history of this pizza goes back to 1889 when the Neapolitan chef Raffaele Esposito created this pizza to honour Margherita of Savoy, the Queen of Italy. In fact, we can see that the colours of the ingredients remind the colours of the Italian flag: red tomato, white mozzarella and green basil.
In Italy, the most important thing about pizza is the quality of the ingredients: pizza is a serious thing. These pizzas are quite simple because the high-quality ingredients make it super tasty and perfect. In fact, in a true Neapolitan pizzeria, you will find only true San Marzano tomatoes and homemade tomato sauce. San Marzano tomatoes are typical of Naples, they are high-quality tomatoes, very tasty and perfect to make the sauce. The other main ingredient of pizza Margarita is mozzarella. In the original version, it’s used “Mozzarella Fior di Latte”, a very fresh mozzarella, delicious and delicate, perfect for that gooey effect on your pizza. Otherwise, another kind of mozzarella very used in Italy and in the Neapolitan tradition is “Mozzarella di bufala”. It’s a mozzarella made with buffalo milk instead of cow milk, that’s why it is considered a more precious product; the final result is that of a little more savoury cheese, perfect to be melt on your pizza.
